The Review
Stepping into this test, the anticipation was real. Ascent’s vanilla bean whey performed exceptionally well in previous spins, and internet lore always hypes up micellar casein as the holy grail ingredient for achieving ultimate thickness in a Ninja Creami. It makes sense on paper, but in practice, this turned out to be a case of too much of a good thing.
The immediate issue lands right on the spoon. The texture is just a little too thick, crossing the line from a smooth ice cream melt into something heavy and overly dense. It lacks the velvety refinement of the whey version, skipping right past creamy and landing on a consistency that feels like powder mixed with water rather than dairy. If you are going to run this through your machine, you absolutely need to modify your base. Skip the usual heaping xanthan gum measurements; you need to cut back to a level eighth of a teaspoon or even less because the casein itself is doing way too much heavy lifting on the binding front.
When it comes to the actual taste, things don't improve enough. The profile behaves like a ghost of its vanilla sister, offering a muted vanilla note that lacks depth. That persistent coconut taste from the brand's base formula is still present, but without a strong punch of vanilla to balance it out, the overall flavor profile tastes hollow.
Ultimately, it's a completely serviceable option if it's already sitting in your pantry, but it's tough to justify buying the bag again when you're looking for that authentic, classic ice cream experience. There are simply far superior options on the market that deliver a true vanilla flavor without turning your pint into a architectural project.
